Soy Dream Recipes

Delicious recipes using Soy Dream Non-Dairy Beverages.

Macaroni Casserole

Ingredients

  • 1 cup chopped onion
  • 1/4 cup chopped celery
  • 1/3 carton (10 oz) Imagine Natural Creamy Portobello Mushroom Soup
  • 1/4 cup Soy Dream Enriched
  • 1 Tbs dried parsley
  • 1/4 tsp pepper
  • 1 can (15 oz) soybeans, rinsed, drained & ground
  • 2 cups dry macaroni, cooked
  • 4 oz Cheddar-style soy cheese, grated

Instructions
Preheat the oven to 350ˇ F. Saute onion and celery in a non-stick pan (add a little water if needed to prevent sticking). Add soup, Soy Dream, parsley and pepper. Mix well. Stir in ground soybeans, cooked macaroni and half the soy cheese. Place in a lightly oiled 2-quart casserole dish and top with remaining cheese. Bake at 350ˇF for about 20 minutes, until cheese is melted and casserole is bubbly.

 


 

Zesty Cornmeal Muffins

Ingredients

  • 3/4 cup all purpose flour
  • 1/4 cup soy flour
  • 1 cup yellow cornmeal
  • 1/4 cup sugar
  • 4 tsp baking powder
  • 1 tsp salt
  • 1 tsp chili powder
  • 1 cup Soy Dream
  • 1/4 cup vegetable oil
  • 2 eggs slightly beaten
  • 3/4 cup shredded reduced fat cheddar cheese
  • 1/4 cup chopped green chillies
  • 1/4 cup chopped jalapeno peppers

Instructions
Preheat oven to 425ˇF. Coat muffin pan with vegetable cooking spray. In medium bowl, combine flours, cornmeal, sugar, baking powder, salt and chili powder. In a separate bowl, stir together Soy Dream, oil and eggs. Add to dry ingredients and blend slightly. Stir in cheese and peppers. Pour into muffin pan. Bake 18 - 24 minutes or until toothpick in center comes out clean. Remove muffins from pan and cool on wire rack.

 


 

Vegan Alfredo Sauce

Ingredients

  • 1/2 cup blanched almonds
  • 1/2 cup water
  • 1/2 cup Enriched Soy Dream
  • 1 minced shallot
  • 2 cloves minced garlic
  • 1 Tbs. canola oil
  • Dash nutmeg
  • Salt, white pepper to taste

Instructions
In blender or food processor, pureŽ almonds, water and Soy Dream until smooth. In sautŽ pan, cook shallot and garlic in oil on low heat until soft, about 3 minutes. Do not brown. Add almond mixture; simmer until sauce thickens, about 3 to 4 minutes. Add nutmeg, salt and pepper. Makes about 1 cup or enough sauce for 4 servings of pasta.

 


 

Soy Dream Smoothie

Ingredients

  • 1 frozen banana
  • 2 large frozen strawberries
  • 1 1/2 cups Soy Dream Enriched Vanilla
  • 1/2 cup orange juice, optional
  • ice cubes, optional

Instructions
Place all ingredients in a blender and blend to combine. Enjoy!

Other ideas:

  1. Take out the strawberries and add raw carob powder.
  2. Pineapple, raspberries, blueberries, kiwi, etc.
  3. Soy yogurt.
