Breakfast Ideas

Breakfast ideas made with Rice Dream.

Corn Muffins or Corn Bread

Makes 1 dozen muffins.

Ingredients

  • 3/4 cup cornmeal
  • 6 Tbs. canola or oleic safflower oil
  • 1/4 cup whole wheat pastry flour
  • 2 oz. regular tofu or 1 beaten egg
  • 1/4 cup unbleached white flour
  • 1 cup Rice Dream Classic Original
  • 1 Tbs. baking powder
  • 1/3 cup maple syrup
  • 1/4 tsp. sea salt
  • optional sprinkle of cinnamon

Instructions
Preheat oven to 375. Sift or mix all dry ingredients. In a separate bowl, mix all wet ingredients. If using tofu, puree in a blender with Rice Dream Classic Original, then add to other wet ingredients. Stir wet ingredients into the dry ingredients, just enough to mix. Oil muffin tin or line with cupcake papers. Spoon in batter, filling cups 2/3 full. Bake for 20 - 25 minutes, until golden brown.

Variations: For corn bread, pour into 8 - 9 inch baking pan. Bake 25 - 30 minutes, until golden brown.

 


 

Blueberry Muffins

Makes 1 dozen muffins.

Ingredients

  • 3/4 cup whole wheat pastry flour
  • 6 Tbs. canola or oleic safflower oil
  • 3/4 cup unbleached white flour

  • 1 Tbs. baking powder

  • 1 cup fresh or frozen blueberries

Preheat oven to 375. Sift or mix all dairy ingredients. In a separate bowl, mix all wet ingredients. If using tofu, puree in a blender with Rice Dream Classic Original, then add to other wet ingredients. Stir wet ingredients into the dry ingredients, just enough to mix. Oil muffin tin or line with cupcake papers. Spoon in batter, filling cups 2/3 full. Bake for 20-25 minutes, until golden brown.

 


 

Rice Dream French Toast

Makes 2-3 servings.

Ingredients

  • 1 1/2 cups Rice Dream Classic Original
  • 4-6 slices whole wheat bread
  • 3 Tbs. arrowroot powder or 2 eggs
  • 3-4 Tbs. oleic safflower oil or butter
  • 1 tsp. cinnamon powder

Instructions
In a wide bowl, whisk together Rice Dream, cinnamon, and eggs or arrowroot. Cut bread into triangles; soak bread in the Rice Dream mixture until softened, 1-3 minutes. Heat portions of the oil or butter in a frying pan or griddle, over medium - high heat. Add several pieces of the soaked bread; do not overcrowd the pan. Cook evenly on both sides for 2-3 minutes or until each is browned. Serve immediately with your favorite fruits, jam or maple syrup.

 


 

Pancakes

Pancakes

Makes 2-3 servings.

Ingredients

  • 1/2 cup whole wheat pastry flour
  • 1/2 cup unbleached white flour
  • 1 cup Rice Dream Classic Original
  • 2 Tbs. canola oil
  • 1 1/2 tsp. baking powder
  • 1 tsp. egg replacer powder
  • 1/4 tsp. sea salt

Instructions
Gently mix all ingredients. Let batter stand for two minutes. Mix in 2 more Tbs. of Rice Dream. Lightly oil pan or griddle; heat over medium - high heat. Use 1/4 cup of batter for each pancake. Cook about 1 1/2 minutes on each side. Enjoy with your favorite pancake toppings.

Variation: To make this recipe using an egg, eliminate egg replacer powder and add 1 egg, lightly beaten. Change the use of the following ingredients to these quantities: 1 Tbs. canola oil, 2 tsp. baking powder.

A wonderful gourmet breakfast that will impress your friends.

Pat's Sunday Morning Crepes

Makes 2-3 servings.

Ingredients

  • 3/4 cups unbleached flour
  • 2 eggs
  • 1 tsp. baking powder
  • 1 cup Rice Dream Classic Original
  • 1/2 tsp. sea salt
  • 1/4 tsp. vanilla
  • fruit sweetened jam, conserves or your own fruit filling

Instructions
Mix together wet and dry ingredients with a few swift strokes to avoid excessive bubbles. Crepes can be made any size, as desired. Cook on lightly oiled pan or griddle, about a minute on each side. Spread filling of your choice. Roll up or gold over to serve, or enjoy in a regular stack, like pancakes.

 


 

Creamy Hearty Oatmeal

A high fiber, satisfying breakfast that will give you energy all morning.

Makes 2-3 servings.

Ingredients

  • 2 cups Rice Dream Classic Original
  • 1 cup old fashioned rolled oats
  • 1/4 cup raisins or chopped dates
  • pinch sea salt
  • 1/4 tsp. cinnamon (optional)
  • sprinkle roasted nuts or seeds

Instructions
Place all ingredients in a saucepan. Bring to a boil. Cover (leaving lid ajar to prevent boiling over), reduce heat to very low and simmer for 10 minutes. Stir often. Serve topped with roasted nuts or seeds and fresh fruits of your choice.
