Soy Dream Nog
|
|
Makes 5 cups of Soy Dream Nog.
Ingredients
- 1 Quart Soy Dream Classic Original or Vanilla
- 6 oz. Silken style tofu, extra firm
- 6 T. maple syrup
- 1/4 C. Amaretto, Southern Comfort, brandy, or alcohol of choice (optional)
- 2 t. vanilla
- 1- 1/2 t. cinnamon
- 1/2 t. cardamom
- 1/4 t. nutmeg
- 1/4 t. ground cloves
Instructions Combine all ingredients in a blender until smooth. Refrigerate before serving.

Pumpkin Bread
|
|
Ingredients
- 1 1/2 cups flour (mix whole wheat or oat and unbleached white)
- 2 teaspoons wheat gluten
- 3/4 cup oatmeal, ground in the food processor
- 1 Tablespoon baking powder
- 1/2 teaspoon salt
- 3/4 teaspoon pumpkin pie spice (mixture of cinnamon, nutmeg, ginger, allspice)
- 1/3 cup mashed soft, silken tofu
- 3/4 cup pumpkin (cooked if fresh, or canned)
- 3/4 cup Soy Dream Classic Original
- 2 Tablespoons molasses
- 1/3 cup apple juice concentrate
- 1/4 cup sucanat
- 2 Tablespoons canola oil
- Fruit or all fruit preserves, optional
Instructions Preheat the oven to 350 degrees. Mix dry ingredients, through pumpkin pie spice, in a large bowl. Thoroughly mix the wet ingredients, including sucanat, but not fruit or preserves, in a separate bowl. Fold the wet mixture into the dry, then add the fruit, if using. Pour about 1/2 the mixture into a square baking pan, just enough to cover, spoon dollops of the preserves about 1/2 inch apart and spread the remaining mixture on top. Bake for 25-30 minutes until center is firm.

Gingerbread Soy Dream Cake
|

Makes 9 servings.
Ingredients
- 1 C. unbleached flour
- 1 C. whole wheat pastry flour
- 1 T. baking powder
- 1 t. ground ginger
- 1/2 t. cinnamon
- 1/2 t. nutmeg
- 1/4 t. salt
- 1/8 t. cloves
- 1/8 t. allspice
- 2/3 C. Soy Dream Classic Original
- 1/3 C. oil
- 1/3 C. molasses
- 1/3 C. maple syrup
- 1-1/2 T. ginger (fresh minced)
- 2 t. vanilla extract
Instructions
Lightly oil a 9-inch square baking pan. In a large bowl, sift together both types of flour, baking powder, ground ginger, cinnamon, nutmeg, salt, cloves, and allspice, and set aside. In a medium bowl, whisk together the remaining ingredients until well combined. Add the wet ingredients to the dry ingredients and whisk until blended. Pour the mixture into baking pan. Bake at 350 degrees for 35-40 minutes or until an inserted toothpick comes out clean. Allow to cool before serving. Serve with a scoop of Soy Dream Frozen Dessert.

Pumpkin Corn Chowder
|
|
Makes 2 1/2 quarts.
Ingredients
- 2 C. onion, diced
- 2 C. green pepper diced
- 2 C. red pepper diced
- 1/3 C. jalapeno pepper diced
- 2 T. safflower oil
- 4 C. pumpkin peeled and cut into 1/2-inch cubes
- 2 T. garlic, minced
- 4 C. (1 quart) Imagine Organic Vegetable Broth
- 1 lb. cut corn (fresh or frozen)
- 1 T. chili powder
- 1 t. ground cumin
- 1/2 t. salt
- 1/4 t. black pepper
- 1 C. Soy Dream Classic Original
- 1/3 C. freshly chopped cilantro
- 1/4 C. freshly chopped parsley
Instructions In a large pot, saute the onion and all of the peppers in oil for 5 minutes to soften. Add the pumpkin and garlic and saute for an additional 5 minutes stirring often. Add the vegetable broth and bring the mixture to a boil. Cover the pot, reduce the heat to low, and simmer for 25-30 minutes or until the pumpkin is just tender. In a food processor (or blender) place 3/4 C. of the cut corn, add 1 C. of the cooking liquid from the pot, and process to form a chunky puree. Add the pureed mixture, the remaining corn, chili powder, cumin, salt, and pepper to the pot, and simmer the soup an additional 5 minutes. Add the remaining ingredients and stir well to combine.

Pumpkin Pie Holiday

Ingredients
Instructions Preheat oven to 375 F. Combine Soy Dream Classic Original and brown sugar in a small pan, heat; do not boil. Combine pumpkin, eggs, molasses, spices and salt in a bowl. Slowly pour Soy Dream Classic Original mixture into pumpkin puree, stirring constantly. Pour into the pie crust and place in oven. Bake for 45 minutes to one hour. Pie is done when knife inserted into center comes out clean. Let pie cool for at least 25 minutes before serving. Top with Soy Dream French Vanilla Frozen Dessert.

Dreamy Corn Bread

Ingredients
- 1-1/4 C. Whole Wheat Pastry Flour
- 1-1/4 C. Corn meal
- 2 t. Baking powder
- 2 T of maple syrup (OR 1/4 C white sugar)
- 1-1/2 C. Soy Dream Classic Original
- 2 T. oil
Instructions Preheat oven to 400 F. Grease a muffin tin (or use muffin papers) or a square pan. Combine dry ingredients in one bowl. In a separate bowl, combine oil and Soy Dream Classic Original, and add to dry; stir just until mixture is moist. Bake for 25 minutes.

Soy Dream Garlic Mashed Potatoes

|
Ingredients
- 3 large baking potatoes
- 1 t. vegetable oil
- 7 cloves garlic finely minced
- 3/4 C. Soy Dream Classic Original
- 7 T. soy margarine
- Garnish: chopped fresh parsley
Instructions Peel and dice the potatoes. In a steamer basket set over boiling water, steam the potatoes for 15 minutes, until cubes are soft. While the potatoes are steaming, heat the oil on medium heat in a small saucepan and lightly sautŽ the garlic, about 30 seconds. Add the Soy Dream and reduce to a simmer. Continue to cook the mixture while the potatoes finish steaming. When the potatoes are soft, mash them either by hand or with slow electric mixer; stir in the soy milk mixture and the margarine, adding just as much as needed to reach the desired consistency. Garnish with parsley and serve.

Mushroom Gravy

Ingredients
- 2-1/2 C. diced onion
- 2 T. oil
- 1 t. minced garlic
- 2 t. chopped fresh basil
- 2 t. chopped fresh oregano
- 2 t. chopped fresh thyme
- 1 t. salt
- 5 cups diced mushrooms
- 1/4 cup tamari (or soy sauce)
- 3 cups Soy Dream Classic Original
- 1/2 C. whole-wheat pastry flour
- 2 C. Imagine Organic Vegetable Broth
Instructions In a medium pot, cook onions for 5 minutes over medium heat in oil and garlic. Add the chopped herbs and salt and increase heat to medium-high. Cook for 1 minute. Add mushrooms, tamari and Soy Dream Beverage. Bring to a high simmer; do not boil. Mix flour and water to a smooth consistency and slowly stir this into the pot, constantly whisking until thickened, about 3 to 4 minutes. Reduce heat to low and let gravy simmer for another 5 minutes.
